We use a Ball 21 quart on our glass top and it is fantastic. Fits about 7 quart jars (depending on wide-mouth / narrow-mouth). We love it. It was a bit pricey, but totally worth it to speed things up when canning big batches.
We also sprung for the stainless steel jar rack, since the standard ones always tend to rust at the welds after a couple of months of use.
I've been processing mine in my Squeezo strainer for decades, before that, a manual food mill, peeling was not part of the process.

Never! Seriously though, Last night I had an epiphany. I use This for holding my Vallejo and Reaper paint bottles. I checked to see if it holds 28mm minis and it does very easily. I can get a few more of these (different brand though, the one I linked seems to be sold out now), stick em on my walls, and load them down with minis. Just take the whole thing down and prop it on the table come game time. Bigger boss minis can continue to sit on my shelves.
Ill try to get more accurate info or a pic tomorrow. I'm pretty sure its a granite ware 33 qt but I have a rack thats flat instead so it hold about 19 half pints approx. I think about 14 so pints. Haven't done larger amounts of quarts so haven't seen how many it holds. Its tall enough to hold half gallon jars.

I do not seem to have a lot of ridiculous things on my wish list. I think the winner is this canning lid rack. Mostly because I have a magnetic lid lifter, and there's absolutely no reason why the lids would need to be in any sort of rack, I just thought it looked incredibly cool. I think the most ridiculous thing is that I'm that much of a canning nerd.

So...I hated doing the lids until I got myself one of these puppies and never looked back. No more picking up more than one lid with the magnet!! Bonus is that you can store the rings on the handle.

If you want to keep your veggies slightly above the bottom of your pot, consider getting a rack for a pressure cooker/canner. Here's what they look like.
A rack for a pressure cooker/canner holds whatever you put on it about 1/2" above the bottom of the pot. It's sturdy, allows for water circulation and is made to be used in boiling water.
I don't know the diameter of your pot, but a quick search turned up racks available in 9" and 11" diameters. The price range is $10 - $15.
