It's just the shape. They only taste different if you get whole wheat ones, or flavored ones like spinach, tomato, squid ink, or things like that. They also hold sauces differently, so pasta with big gaps/grooves (like rotini or penne) hold chunky sauces better than smooth ones (like spaghetti, which is better-suited for smooth sauce). It's just nice having some different options around the house; sometimes I want a pasta shape for a good meat sauce that isn't rotini... Plus it's also a nostalgia factor - pappardelle is basically just giant fettucini, but just knowing I'm eating pappardelle instead of fettucini makes me feel warm and fuzzy. :)
Squid ink pasta haha I thought it looked really cool! I mean it's black pasta!
pretty California
I made Palmini noodles for the first time last night. Rinsed them well, dry-fried them in a little bacon grease, and served them up alla carbonara.
I'm not sure if I like them. They don't have the same texture as real pasta and their taste is not as neutral; they do have the occasional vegetable "strings" in them (a bit like artichoke). They were sturdy, standing up well to dry-frying and to the sauce. (It's been a long time since I've had pasta carbonara and boy was it good.)
Husband (who is not doing keto and dislikes "diet" food) loved them, and not just because of the sauce. At seven bucks a bag, though, I don't think this is going to become a pantry staple.
Will report later on the pumpkin spice chia pudding experiment.
