Only use oils that are made for high smoking points. Also, check for expeller pressed oils (hexane is not used in this process). I use Avocado oil for high heat cooking. Here is the amazon link.

I use the Chosen Foods brand avocado oil. Here's what I do (indoors mind you). I put the steak (still in the bag) in the freezer for 10-15 mins. I take my cast iron pan and put a little bit of avocado oil in the pan and wipe it around with a paper napkin. That's it. Put the stove on High and wait until the pan registers 500F using a laser thermometer (the cheap ones off amazon). Remove steak from bag and dry thoroughly with paper napkins and place directly on the pan with no additional oil. Heat one side for 1 minute, flip, and add a 1/4 stick of KerryGold butter along with some rosemary and garlic cloves and spoon it on the steak once the butter melts (fast!). After 1 minute, I'll flip one more time to spoon the butter on the other side of the steak and remove. For additional steaks, I do not put any more avocado oil in the pan.

This reminded me of something I've been wondering recently...

  • Chosen Foods Avo Oil says 1 tbsp (14g) = 130 calories
  • Baja Precious says 1 tbsp (15 ml) = 120 calories.

    It might sound like it doesn't matter, but when I blend 8 meals together, I need to measure out 2200 calories of oil. Then that slight discrepancy makes a huge difference. If you were to measure the Baja Precious by weight, would you just assume 14g = 130 calories like Chosen Foods, or 15g =120 calories, or something else?

    I have a hard time believing pure oil has a different caloric density based on brand......
