Since you are not backpacking, there is no need to have an underquilt that is designed for backpacking. You can just use a regular quilt or blanket, like you would buy at home goods store. For example. You might be fine with getting a full/queen size and wrapping yourself in it. If not, you can hang it under the hammock as an underquilt, and use another blanket as a topquilt.

I have an "extra warmth" "down alternative" quilt, and it is generally too warm to sleep with even in winter. ("Down alternative" is marketing-speak for "synthetic", and is less expensive than down.) I wish I had just bought a regular-warmth one. I live in New England for reference. It is very heavy and very bulky. Whatever you get, be sure to account for it in your hammock's weight limit.

For safety reasons, you should not. If you fall out, or your suspension fails, you could be seriously injured. Best to keep it reasonably low to the ground, just in case.
