Buy a Retro Tink 2X if using old consoles with the TV it helps a great deal not only in compatibility but also image quality.

Use the S-Video connection with the N64 and Dreamcast, get a cheap S-video switch so you can use both with the Retro Tink 2X, I don't think the N64/Dreamcast support component but if there is a solution out there you can use that too and rely on the switch built into the Retro Tink 2X.
