I bought the Hyperkin Travel Bag off of Amazon, and I think it's fantastic. It can't quite hold everything you're wanting, but it fits the Switch, the dock, it has a strap perfect for holding a pro controller in place, and just a little bit of extra room (I use that space for a Joy-con wheel). If you're willing to put your Switch in a separate case (I do this because I personally prefer putting my switch in a hard case) or not bring your dock around, that'd give you plenty of space for all the extra accessories you're looking for.

I took a look at the backpack but I ended up going with this travel bag instead, looks like I should hopefully be able to cram everything in there.

It will not be possible. The dock contains the hardware that tells the switch to shut off the display and display video out. Without it there isnt a current way to tell the system to display over the TV.

Perhaps a third party will make a replacement in the future but for now, youre best off getting a travel bag or case. Or just use a backpack the whole system is really tiny anyways. The Switch plus cables and controllers is like half the volume and weight of an xbox one without cords.
