The primary differences are weight and shape.
For weight: Imagine lifting a 50 pound weight 10 times, or lifting a 25 pound weight 10 times. You'd be a lot less tired with the 25 pound weight, right?
Now imagine lifting a 2.5 pound paddle 10,000 times, and lifting a 1.5 pound paddle 10,000 times. Though the weight difference is small, it makes a difference on long trips. That's why people who do long distance touring pay hundreds for super-light paddles. If you're not planning on long trips, it doesn't matter as much.
As for shape... look at the shape of these $10 paddles vs these $200 paddles. But shape doesn't correspond to price, and $50 paddles have roughly the same shape as $500 paddles, just don't get some flat ones and you'll be alright.
I own a $10 paddle, a $50 paddle, and a $150 paddle. The $10 paddle is worthless and terrible. There $150 paddle is only a little nicer than the $50 paddle. The expensive one is lighter, but with most of my trips, I'm not out long enough for the weight to make a difference.
