Great job! I really love the design! For the moisture problem, I found that using one or two of these silica hygrometers
really helps.
Depending on what you’re storing, I’d look into some gasketed tubs and desiccant.
It’s not the cheapest solution, but something like this:

The desiccant can be periodically regenerated. When it changes color you toss it in the oven and bake the moisture out.
I wouldn’t store food this way.
That being said, all through my childhood my dad stored our camping gear in Rubbermaid ActionPackers.
Why not just get one in a can that can be popped in the oven?

Just pop it in the oven (as per instructions) when it's saturated.
Well, if the room is sealed, dehumidifiers can be run where they turn on and off on their own.
If you go the other route, seal it up as best you can and throw one of these in there.
You can also buy some test strips to see how good of a job it and the seal are doing.
I have almost the same setup as you, expect my hump is on the right and taps are on the front. I love how clean yours looks.
One thing I added that made a huge difference, is a jar of desiccant that can be regenerated in the oven. Keeps the inside nice and dry.
