This is pretty straightforward for SOME versions.
You need to pay attention to which edition of MW2 you have. The first one I had was this edition http://www.amazon.com/MechWarrior-ATi-3D-Rage-Edition/dp/B000BERQ8O
Which would only play through a tedious tutorial setup which ends with you always running the game through dosbox.

Titanium edition, however, is as simply as putting the disk in, and running MechVM

>>2: That isn't how VRam works at all.

So back in the old days where the VRAM was not for textures but was mainly just a framebuffer, then yeah there certainly were limitations on functionality when expanding to multiple monitors. But its been >20 years since that was an issue. RAM has been super cheap for quite a long time.

The first video card I bought with my own hard-earned cash was an ATI Rage II 21 years ago. It had VGA and DVI outputs with 4MB RAM (upgradeable to 8MB) which was HUGE at the time. More than enough for 32bbp on two 1280x1024 screens with plenty of RAM left over for some basic 3D operations. Of course if you had two monitors using up RAM for framebuffer, you had less to use for other stuff, so most 3D games required that you use only one monitor.

But yeah totally not an issue these days.
