There's a few different options:

There's this kind of weeder that's good for really getting down into the cracks and pulling stuff out. It's time consuming though.

There's this style that is good for speedy weeding on flat surfaces - you just kind of sweep it down the cracks and it slices everything off. I've linked the most expensive one with the long handle, you can get these much more cheaply if you go with a shorter handle. Unfortunately these just cut off surface growth and don't get the roots, so anything you whack will be back soon, but if you make it a habit to weed a patio or whatever the weeds eventually give up.

And then you've got your chemical options. Glyphosphate is really the best for such a job, but it leaves the dead plant still sticking up so you've got a round of pulling/slicing cleanup that will need to be done once the weed is dead. I find it just as much work as the blade in the end because of that.

Some people will also recommend dowsing the weeds with boiling water or getting a weed dragon (propane flaming torch) but these are pretty dangerous to use.
