I got the uniform keys. They are good if you plan on tiling the keyboard. The top rows were a stretch when it was flat. I'm currently using a "standard" profile key set for the letters and numbers and the uniform keys for the modifiers and really like the combo.

Just replace everything with an NPKC caps. You will probably spend as much on just a couple of individual caps.
Fellow Mac user, I spent some time looking for something similar.
WASD Keyboards has a black doubleshot PBT with blanks for the OS keycaps. Their other doubleshot PBT keycaps have legended Windows keys.
I ended up buying this set of black PBT side-printed key caps combined with the "add 8 keys" from this Dolch clone set to get the Mac OS keys I wanted. Ordering wasn't straightforward (since I was combining pieces of different sets) but the vendor was easy to work with.
