Nice! Since its in a cabinet, and its a single DIN, you should be able to find some great options for great prices. Probably so many options it will be hard to narrow them down! If you want built in Bluetooth, you will probably find lots of good options from good brand names for around $99. If you don't want built in Bluetooth, you can probably find nice options for more like $70.
I've had good luck with Sony stuff for the last few years, so I think you would probably be very happy with something like this. It comes with Bluetooth built in, and also with it's own remote for volume and basic functions. Of course there are tons of other great models and brands out there, so I don't mean to say this is the only way to go. If there is something else you find that you like more, feel free to post it here and I'll look it over for you.
Also just wanted to say you are a good wife! Buying a man a stereo for his boat ... that is just a WIN WIN. :)
Edit: If you think you might someday upgrade your stock speakers, and there is room in your budget, this high powered version might be worth the extra money. But if you were happy with the sound of the original stock radio, I would not bother.
I bought headlights, brake lamps, interior lamps, turn signal lamps, literally every bulb off Amazon.
If you go to superbrightleds.com they have a vehicle finder and it will tell you what type of bulb each lamp is. Then just search the "type of bulb led" and it will pop with all the equivalent bulbs.

Here's a good head unit option that has plenty of power: Sony MEX-XB100BT - $150. I would recommend installing a 12 gauge power and ground lead ($15) for this head unit as it is more powerful than most.
old car - 2000 Chrysler LHS. The amp is an 11 speaker Infinity 688AC 360 Watt. The deck I was planning on purchasing though is nice because it has unlimited programmable colour so i can match the rest of my cars lights, my current deck does the same thing. Current Deck----New Deck

Basically where the fuse is going for the Radio I was wondering if I could cut them off and have it go from the fuse box to the radio and put a 15 amp fuse in and get the same results.
The fuse box on the radio is supposed to be plugged directly to the battery for max power but the auxiliary fuse box will be plugged the same way.
If not that's fine I just wanted to make sure before I went and cut it out and I will just run a wire from the battery to the radio.

the thing says about 47 rms, its a built-in class d amp.
also those polk are like 120 rms for the pair. (60 apeice)
if i could tip you in a bit, before i even noticed that only one channel was working, i was usually doing highway driving, going over 60, and with a softtop, it was always alot of road noise. with that being said, i was usually always using my headunit at 44- 48 out of 50 on the volume. you think the crap was clipping and i burned out all 4 of the speakers.
