Congrats on your weight loss. I'm a type 2 diabetic who learned to look at sugar differently. I now count it as a carb, keeping in mind it's one carb that can spike my blood sugar up and down.

Baking is where I use sugar. I usually cut the amount by a third because using.the amount in the menu can be too sweet. Fruit purees also can be substituted in part for sugar. Sweet potato for example. I used a sweet potato puree for a dessert and had to eliminate most of the added sugar called for.

I also use pure stevia and have for years. Its volume is miniscule compared to sugar, but you can bake with it. You can buy the stevia products designed for baking, which are either part stevia/part sugar or stevia with a filler (inulin, maltodextrin). You can also buy pure stevia powder and mix your own sugar/stevia for baking. Stevia quality varies widely, I'm very picky about stevia quality, taste and price. This is the one I buy on Amazon.. I transfer it into a smaller shaker bottle originally purchased to test the product. You can see the savings in the larger size. Stevia does not spike blood sugar. Artificial sweeteners like Equal and Splenda do spike mine, and over time I had to use more to get the same sweetness.

The other sweetener I use is Agave syrup. It has a lower glycemic index than sugar. The raw syrup has a deeper sweet taste. I primarily use a 1/2 teaspoon in my tea to offset the higher sweetness of the stevia.

Honey has the same glycemic index as sugar, but many brands I find are sweeter than sugar. So maybe use less.

Ive heard of monkfruit but haven't tried it because of the price point. Xylotol upsets my stomach and causes heartburn.
Edited to add: I avoid products.with high fructose corn syrup.
