I'm currently playing on this yamaha. It's well built, got a think neck (easier to play, especially for beginners) and overall I don't have any complaints about it. I've been playing for 2 or 3 years now, I think, and I don't see the reason to replace it in nearest future, as I play mostly as a hobby. I've plugged it into the amp and it sounds nice from the amp as well, especially for its price.
It costs as much as your bundle, and I don't really like bundles. In my opinion, you don't need this stuff at the moment (like the amp) and when you get comfortable in Rocksmith, you can buy amp separately, the one which would be far better than the one in the bundle.
Also, you should consider to buy a used instrument. Musicians, usually, tend to take a good care of their instruments, so you might grab the guitar that costs 400-500 for 200. But if you want to buy new, I'd definitely recommend Yamaha that I've linked.
EDIT: I've also noticed that the guitar in your bundle is the Epi Special II. This was the first guitar that I've used (borrowed from a friend) and, for me, it was far more easier to play on the Yamaha, because it has strat-like neck, which is thinner.
I didn't realize the HSS were a little bit up there in price. Lowest I see is 400 ish. Probably more than i intend to start. Have you played the Yamaha? I see the PAC112J is only $200. Seems good. I dont know if i need a humbucker or not to start.
My other consideration is probably a Squier Standard or maybe splurge up for the classic vibe or whatever. Thanks again for your help! You definitely have a lot of knowledge to share.
