I used this air mattress and this pump.. The mattress was mediocre- very comfy when fully inflated but did lose air overnight so was a bit saggy by morning. The pump worked perfectly. I did meet someone at a supercharger who said he used a memory foam topper and claimed it was more comfortable than his regular bed... I would at least look into that if doing it again.

Since (a) the rear seats do not fold completely flat and (b) there's about a 1.5-2 inch height diff between the seats and the trunk space, I put several collapsed cardboard boxes in the back to level the sleep surface. A smarter thing to do would be to cut some dense foam to the shape of the trunk space, but nevertheless my cheap bootleg solution was pretty level.

I got the sunshades (the complete set minus pano roof) from evannex for privacy and to keep out light. With the exception of the rear shade, these worked beautifully. The rear shade depends on suction cups to adhere to the window and some of them don't work very well.

Most highway rest areas are, I think, plenty safe. It turns out a lot of people do this... I definitely was rarely, if ever, the only one sleeping in his/her car.

Lastly, I advise sleeping with your head toward the rear. I didn't do this until someone on /r/teslamotors suggested it, and it made a huge difference in comfort because I could stretch my legs out over the center console if I wanted to.

Here's the informal AMA I did while on the road :)
