I used a Samsung 970 2TB as my SSD. You can find them for cheaper though than Amazon, I got mine on eBay for $470.
Apple recently supported aftermarket NVMe SSDs in High Sierra (and later Mojave, which I am currently running).
There are limited SSDs that Apple supports (and it seems to be growing slowly). If you want the long forum read, this is where I started; there's some user in that forum who is rather diligently collecting the supported SSDs and you'll see him on varoius pages through the forum post. There's tonnes to read as it is 80+ pages long and I just went with a safe and supported SSD with the adapter someone else also said they worked. If you look on the Amazon reviews of the adapter some other person also lists the Macbook models that worked for them.

I am not quite sure what you mean by this? I don't encrypt my Macbook so maybe it's a moot point?
Also just want to say thanks as you inspired me to just update my old machine instead of tossing it (on craigslist of course) and getting a new one. I was thinking about upgrading until I saw those 2TB upgrade prices ($$$$) and figured out that it's non-upgradable. Your videos helped me understand that my macbook is still well within my needs and I shouldn't upgrade. Keep up the good work.

I own a 2011 iMac 27 - so I'm happy to help.
Your specs are fine in terms of processor, RAM, and GPU.
Really, the best bang for the buck, on THIS unit, is the drives. The main board has 2 SATA3 ports, and you should take advantage.
You need to get a decent SSD (1TB units are far cheaper now - DON'T GET A QVO MODEL), and I got an 8TB hard disk for the second drive. I didn't do Fusion this time. I use my iMac as a Plex server, and it ROCKS as that.
NOTE: If you take out the mainboard - take off the CPU heatsink and replace the thermal paste with good stuff (MX-4). Spread it thinly, clean your fins/fans, and you'll notice much quieter fans.
If you add a SATA3 drive, or replace the stock drive, you'll need the temperature sensor for each drive you add or replace. Amazon has it - let me know if you need a link to the right one.

And then got a crucial nvme SSD for 95 bucks. Worked great.
And costs about half of that SSD you sent.
Those tend to be DRAMless which isn't amazing for a boot drive
The Crucial MX500 has DRAM and is $10 cheaper than the equivalent Kingston SSD on Amazon at least. The MX500 tends to be the best price/performance for a SATA SSD. And it's cheaper than a Kingston.
That is a special Apple SSD, unfortunely no normal M.2/mSATA works.
I see that that is either a 2012 or a early 2013 15', and because of that the adapter @jacobstep linked won't work :(
