For organization I'd say you could probably mount some magnetic strips around the top or side walls. Easy storage of steel spice tins or knives.
Maybe consider printing various measurements onto the surface (either with ink or burning, I'm not sure how either of those options would affect the cutting surface) like this board: http://www.amazon.com/Fred-Friends-OCD-Cutting-Board/dp/B004TEZD64
The tin foil / plastic wrap should be fairly straightforward, you'd probably only need to mount what are essentially dowels on one side with one end free so you can add more, with a removable cap so the rolls don't fall off easily. Maybe then also add a thin strip of metal along that edge of the table so you can easily tear sheets off.
I'll try to think of more options after work.
