I think my biggest stigma with home-cooking wasn't always that cooking was hard, on the contrary I enjoy trying to make stuff myself, it was that something wouldn't come out tasty or it would be bland. Really most recipes or meal ideas aren't that hard to follow and I'm sure people on this thread will give you some good ones, but I'm going to give you some extra advice and just remind you to season your food well, like before and after cooking. If a recipe calls for like a teaspoon of cumin or whatever, try a tablespoon or more, worst case it tastes a lot like cumin, which was the point of adding it in the first place right? I even read something yesterday about how mothers in one country or another add extra seasoning to veggies for little kids because they might not like the taste of veggies the first time they have it and they slowly take away seasoning as they become accustomed to it. You don't necessarily have to measure out all these seasonings they're usually supposed to be to taste, so make sure you can taste them.

Also, short plug, there's a lot of easy ways to cook a lot of other staples and sure, you can always roast potatoes, but if you're looking for a way to bake them that doesn't take an hour and a half, these are literally the most useful cheap kitchen gadget in my kitchen, https://www.amazon.com/MyLifeUNIT-Microwave-Potato-Baked-Baking/dp/B016MC5IVK. Doesn't matter which one you get or color, make your own if you want, they're terry cloth I think, but perfect baked potato in like 5 minutes every time. We usually do sweet potatoes, but the regular ones would probably be fine too.
