I started using it on recommendation from my nutritionist to replace sugar. It does not effect blood sugar and it is all natural. You have to be careful that you're not using one that has fillers in it. You also have to be sure that you don't add too much or it will be bitter and gross. I prefer it in liquid form, like this one. Or the one with vanilla added is really tasty. I never add more than 4-5 drops to a serving. If you're switching from sugar in your coffee to stevia in your coffee, it'll take a few days, but it will be ok after that transition. I'll add 3-4 drops in some plain yogurt and top with thawed out frozen berries and some sliced almonds. A super yummy, sweet treat!

Aw crap, now I'm wishing I'd written down exact numbers. I don't ever cook with measuring utensils in my kitchen.

Ingredients:

  • 1 cup of heavy cream
  • Sweetener equal to about 5 tsp of sugar. In my case, this liquid Stevia extract. use whatever you like.
  • 3 tsp of vanilla extract. Be careful, some vanilla extract has sugar in it.

    Directions:

  • You'll want to run this through your weapon of choice: Hand mixer, stick blender, or if you so desire, a hand whisk. (An elegant tool, for a more civilized age. But seriously, hand mixer or stick blender.)
  • You're going to want to whip the heavy cream, almost like you're making whipped cream. Because you are. Don't make the mistake of sticking the stick blender at the bottom of the cup and just leaving it there. You need air to get into the cream.
  • For the culinarily-adept: stop at stiff peaks.
  • For the not so culinarily adept: Stop when the cream stops swirling. Make sure everything is all evenly stiff, though.
  • Transfer all of this into a gallon freezer bag, and suck all the air out of it.
  • Fill another gallon freezer bag halfway up with ice, then half a cup of rock salt. Put the cream bag inside the ice bag, and agitate for about ten to fifteen minutes, turning it over and over, mashing the inner bag, go nuts. (We're using two freezer bags, instead of a smaller, sandwich bag because the freezer bag is more durable, and will resist being punctured and leaking salty water into our delicious ice cream.)
  • After fifteen minutes, you can remove the cream bag, shove everything down into a single mass, and throw it into the freezer to harden.

    I've only made two batches, and I'm still trying to refine the recipe. If any of you try it, send me a message. I will try doing this with a proper ice cream machine at some point, but for my purposes, ziplock bags are just fine.

I use this version of liquid stevia for most of my sweetener needs: NuNaturals Alcohol-Free Liquid Sweetener It doesn't have the weird aftertaste that I find with a lot of the other sweetener substitutes. (Normally I get it straight from Amazon, which looks to be about $2 cheaper - I think Amazon is just out of stock at the moment, hence the higher price. One bottle lasted me 3+ months, since I only need 10 or so drops whenever I use it in keto desserts.)

When I need something that will add bulk to a recipe (like when baking), I use Truvia (their website has calculations for replacing sugar, which I use to adjust for cup-for-cup sweeteners), which I have found in all of my local grocery stores with the Splenda and other sugar substitutes.

Can you avoid this product entirely? Conversely, I assume you're not going to use much of it, so, depending on how little alcohol you can have, its effect is negligible. Myself, I used the dry stuff, rather than drops.
