I have a playseat challenge which is similar to your chair and I found an old reddit post that suggested using these handlebar mirror mounts (can’t see to find it now) but google playseat challenge shifter mount DIY and images pop up

Nice cheap option
I adapted the design a bit to fit my needs and bought longer screws from Screwfix so I could add a strip of wood. See pics below of mine

It’s a bit crude at the moment as I used a bit of old architrave just so I could get playing but my plan is to buy a new piece of wood and paint it black. If I ever stop playing for 5 minutes to do it.
