I wasn't sure about multiple controllers so I checked the app, and it looks like it recognizes different controllers. I only have the one so I can't confirm this, but when I connect the controller it designates it as "Client 1" and the corresponding light activates on the controller. I grabbed a screenshot for you, I was using it earlier today. So it may be worth a shot if you're willing to spend the money on extra controllers, but I would say do some research before you commit.
You should be happy with Retroarch, it emulates so many devices pretty well. Slight learning curve to getting it set up but you shouldn't have too much trouble.
I had to dig through my order history to find it, but this is the adapter I bought. I've heard of folks having better luck with others (like I said I just went for cheap, it was on sale for less than it currently is) but effectively they all have a charging port on them. It looks like there is a larger selection of them of them available now too, so I would go with the highest rated one.
If you wanted to use a Qi charger instead of the built in charging port, that may work better but you'd want to get a quality one that will charge it fast enough. Driving an external display drains battery fast. Also, wireless charging can generate a lot of heat, so coupled with driving the external display, that may be a bad idea. Again, you may want to research this first before committing to any purchases.
