By composite, do you mean it's got the red and white RCA connectors?

The Switch's headphone jack still works while it's docked.
If you don't want to use headphones, you can buy a cheap cable like this to use an external receiver/amp/speakers
If having a digital audio signal is better for you, you can use something like this to extract the audio from the HDMI signal and send it elsewhere via Toslink optical
Note that none of these options will give you surround sound though. But since you were planning on using cheap integrated speakers from a monitor, I'm guessing this isn't an issue for you.
3.5mm and RCA are just connectors. You can easily convert back and forth with cheap cables.
