How about its location, like Fox's Glow Puck?

Basically Fox used transmitters embedded in hockey pocks to highlight the pucks on broadcasts, like this. It was an unqualified failure because many people, mostly Canadians, weren't ready for the future. Obviously highlighting discs is not necessary for ultimate, but you could have it so that cameras track the disc throughout the game, like this or this (please ignore the terrible reviews on that second one). Set up a few cameras around the field, maybe with different zoom levels, and it could film the game without having to pay anyone to film it. In fact the guy that sets up the cameras could then play in the game. You could have professionalish filming on an amateur budget.

Also, if you accurately collect all the location information of the disc you can back out all the other stats you're looking for, like pass distances, speeds, average time in each team's half etc.
