Carrying a double-stack isn't actually that difficult.

Or you can spend only $30 for the M&P9c and DTOM only.
Either way, you can see how well you can conceal (read: this holster is basically a POS and doesn't reflect how COMFORTABLE it could be with a quality holster, only how concealable) a double-stack. I think you'll be surprised.

Of the 1911s under $700, that's what I'd go with too. If I could, I'd try for the Colt 1991, but the SR1911 is decent enough.
Of 1911s in general, I think that it's too big and heavy of a handgun for too little capacity firing a round that has more recoil than you necessarily want to be dealing with.
It's manageable, sure, and you can shoot it well (hell, you could probably shoot it better than most striker fired guns from the trigger alone), but speed counts, and with more recoil comes more time needed to settle back to point of aim and more technique needed to shoot under immediate duress.
That and it sucks to sit down with a 1911 beavertail jabbing you in the abdomen.
