Depending on the resolution, and the version of HDMI protocol you're using, it can support 120Hz.
The limitations are different for each, but the core data protocol for video transmission is the same for DVI & HDMI. That's why basic adaptors like this can work when they are just a physical adaptor with no active conversion circuitry.
Once you get deeper into it - single link vs dual link DVI, what version of the HDMI specification the HDMI side of the link supports, etc, you can get some incompatibilities, but you'll definitely get at least 1080p / 60Hz.
