Here's how I did it DIY
This works for any device that can output RCA audio

Use RCA over CAT6 balun's https://www.amazon.com/Stereo-Audio-Balun-Extender-Cat5E/dp/B01HPJ0LR0

Run them into a XAP800 in your wiring closet https://www.ebay.com/p/ClearOne-XAP800-XAP-800-Conferencing-System-Microphone-Mixer-Unit/1300246568

Use whatever amps you want on the backend to power the zones. I like auto-on/off amps. Monoprice have some.

Each XAP800 will support 4 stereo inputs and 6 outputs. You can link multiple together if you need more inputs.

Configure the XAP800 to have 2 gating groups (a Left and Right) for each room. (XAP800 limits to 4 groups so each matrix can do 2 rooms) and add input sources to the group. Set gate time to 8s and tweak the gate values to stay off during low level noise.

End result.

up to 4 inputs/room (I pipe my TV, bluetooth dongle and Karaoke into my living room zone)

the matrix allows only one to play at a time and will auto switch to another when one stops.

you get 12 band EQ on all channels

you can configure sub outputs (remember you have 6 stereo outputs to play with) and pipe them back over cat6

it is configurable over serial so you can automate absolutely any function (for instance I have a sub woofer volume control on my harmony remote)

Thank you for the cat5/6 suggestion. I am not familiar with blaun, but will research that.

Is it as straight forward as getting one of these for rca and these for 3.5mm?

If so, brilliant! and that should yeild a cleaner signal feed?

I would love to just go pure wifi, but don't trust the range by my pool out back. Decent at top of deck near house, but not reliable by the pool.

Want to be able to control music at all times :)
If I'm out of the house's wifi range I can still use my services over cellular, and beam them to bluetooth. Have BT receive location mapped out where it will be within range of my two "controlling" locations.

Chromecast and sonos are interesting and attractive choices, but I have the majority of the hardware I already need. Just need to get it all hooked up and that is where the wiring comes into play. If I was starting from scratch, I would consider those options.

thank you again.

Thanks! Seems like they may also work? Stereo RCA Audio Balun Extender Over Cat5 Cat5E Cat6 Cable Max 250FT https://www.amazon.com/dp/B01HPJ0LR0

You need the pinout for the RJ at the sub. There is no standard for this. You can get an RCA to CAT5 Balun and hookup the receiver end. You can put an RJ45 on the sub end but you need to know the pinout and make it custom to match the pinout.

wouldn't this work? https://www.amazon.com/Stereo-Audio-Balun-Extender-Cat5E/dp/B01HPJ0LR0

how long is the run?

you could also setup a linux device (Rpi, compute stick, etc...) and forward the audio to it, that way no wiring runs and you don't need to install anything hardware on the server
