Update: As I discover additional boxes that might work, I'll list them in this reply.

(as of this moment, none of the boxes below seem likely to work)

This one is half the price of the one I mentioned in the opening post, but looks like it would be a total crapshoot as to whether or not it would actually work. Its description says it can do LPCM and 5.1, but it doesn't say whether it can do both at the same time (as opposed to 2.0 LPCM or DD 5.1). The reviews for it seem to say that it doesn't fully-masquerade the TV's EDID from the source device, so unless the Wii-U can force 5.1 and ignore the EDID, it wouldn't work.

I'm not optimistic, though... this one looks identical, and ITS description suggests that it can only handle 2.0 channel LPCM, and can only do 5.1 via DD or DTS. https://www.amazon.com/ViewHD-Extractor-Decoder-Headphone-VHD-H2HADi/dp/B01D9MPCUI/ref=sr_1_13?ie=UTF8&qid=1468525123&sr=8-13&keywords=hdmi+surround+extractor

Another one that appears to not support 5.1 LPCM -- http://www.ebay.com/itm/HDMI-Digital-Audio-Decoder-To-HDMI-Optical-Extractor-AC-3-DTS-LPCM-5-1CH-Audio-/181854931153
