There's no reason to wait if you need it now. The only reason that the RX 480/580 was preferred over the 1060 was because it was a few bucks cheaper, even if it came at the cost of additional heat/power consumption.
Zotac 1060 Mini ($230):

(the 3gb 1060 is physically less powerful than the 6gb, whereas the 4gb 480 is the same as the 8gb just less, slower VRam)

If you don't believe me, listen to what GN said in his brief mention to the 3G vs 6G. Within 12% at most in worse scenario.

> ...In most scenarios, we are more likely to be bound by cores than VRAM limit for both cards.
> ....To all those claiming the higer capacity (1060 6GB) will last longer in the long run.....we are more likely bound by ROPs/Cores prior to become memory bound.
The one exception is Shadow of Mordor's 0.1% low, but that is 0.1%. In that case, drop down a notch and then its fine.
Cheapest 1060 3G vs Chepeast 6G. Worth 90 bucks more?
