First, kudos to OP.... definitely NYC looking Pastrami. I steam mine by using a 6 inch full hotel steam table insert pan (https://www.amazon.com/Update-International-NJP-1004-Stainless-14-5-Quart/dp/B0036C67U6/ref=sr_1_6?ie=UTF8&qid=1549419563&sr=8-6&keywords=full+size+6+inch+deep+stainless+steel+steam+table+pan) filled with about 2 inches of water and putting over 2 burners on my stove. Then insert a 4 inch perforated hotel pan ( https://www.amazon.com/Perforated-Stainless-Anti-Jam-Standard-Weight/dp/B07GRHXSZ9/ref=sr_1_3?ie=UTF8&qid=1549419769&sr=8-3&keywords=perforated+steam+table+pans) and lay the pastrami in it and cover with foil. Bring the water to a boil then reduce heat and literally let it steam on low for hours, until 205 degrees or fork tender. Top off your water level every 30 or 45 minutes.

Unfortunately "just get the permits" is pretty complicated. The food must be prepared in a kitchen designated for distribution (not used for any other purpose). The food must then be transported in temperature control (both hot and cold). The temperature must be maintained at the service location as well.

18 months seems young for the coordination that some of those activities need...I'd do more "exploration" activities...

Taking a bucket of colored balls...sort them into groups...or pile them on the floor and run through them, roll through them, crawl through them...rolling or throwing them, putting them into an taking them out of another container.

Wood blocks with different shapes and colors...stacking, building, putting in and taking out...etc.

Finger puppets, board books, magnets for the fridge, paper tubes (from paper towels or toilet paper...for stacking, rolling, squishing, passing things from one end of the opening to the other and waiting for it to drop out). Filling old containers with things...like rice, beans, etc for small "instruments"...rubber bands across a box, even using real instruments like drumsticks and tambourines for making noise.

I also like containers for carrying and sortying...

Sand and water play in rectangular buckets (like these - you can find cheaper "bus trays" or even large tupperware type containers) at the kitchen table. Pouring things back and forth is also a common thing.

It is a workbench I got it all from Amazon. I was looking at doing the solid maple butcher block and use pipes for legs then I found the workbench legs that are adjustable and decided it would be cheaper and allows me to.run chord leg. I thought about painting the frame still might just wanted too excited to put it together.

My orders are never all over the place when I keep them in my bag. it's probably the bag I use. As I stated in my post, this is my first complaint. However it's not my first experience.

I'm not sure what PM is. I do believe it's unprofessional to bring the food to the customer outside of an insulated bag. Bags really do keep food warm. Once the food is in the bag there should be zero reason to open it until it gets to the customer. I have a pizza bag for pizzas.

You're right about being respectful though. I simply disagree about not bringing the bag. Maybe it's because I managed pizza places in college.
