I'd say an unbranded tulip and you're done. Or two. Or four. Depending on your plans and your rate/likelihood of having beer geek guests over. To the degree glasses make a difference, this shape is favored for various reasons like, surface area exposure to generate more aromatics, concentrating those aromatics with the taper, head retention for some reason, etc.

Not sure why they call it a stemmed "pilsner" glass since we're used to seeing a different, taller style of glass typically associated with pilsners, but a tulip by any other name would smell as sweet. They make them smaller, but I like this bigger version.
I have a couple of these and they're just my default for anything better than everyday beer, but realistically could be somebody's only beer glass just as easily. I've never bothered to test whether my senses are attuned enough to notice a difference vs., say, a shaker pint, but I figure it can't hurt. With these in my cabinet, I don't otherwise feel compelled to get a bunch of different shapes for different styles. Some people are glass junkies and have fun getting lots of different kinds, but if you want to one-and-done it, I think this is the one.
I think branded glasses are tawdry myself but lots of people prefer branded/painted/artsy and like to collect different ones. Luckily there are tons of branded glasses in this shape from lots of breweries if you like that better than plain.
Not even a mention of the TeKu? The glass was invented to practically replace the standard pint. I feel this list is good, but could use some help.

No glasses in a restaurant are BIFL. It's a sad truth about restaurants. You will constantly have to buy and re-buy glassware. Trust me. The best way to prepare for this is to keep it simple. Have a few types of glasses only:

Keep it clear and design free, manufacturers up charge for that stuff, plus it's easier to polish glasses like the ones I showed you. Having clear and plashed glasses will work in any restaurant, fancy or not.
Pints
Pint glasses, they look decent and feel quality. They are one of the most durable and versatile glasses as well. Plus you can use them for everything, pretty much.
Wine
Quality wine glasses are thin and breakable. The glass on wine glasses should be thin (esp. for reds). As for wine glass durability, you can always get stemless glasses, they are like wine tumblers. You can use them as an all-purpose glass for both reds and whites. Losing the stem gives the glasses more stability they don't break when they tip too. Most importantly avoid crystal. Stick with simple, clear, stemless wine glasses. They'll be quality and cheap.
Hot Beverages
You need something with a handle to serve tea and coffee (or any hot beverage). Keep this clear and simple as well. Hot bev glasses are thicker glass too so they don't break easily.
SUMMARY
Those are the only 3 types of glasses you need in a restaurant. Everything else is optional. Those three are the cheapest and easiest to replace because you will have to as no glass in a restaurant is BIFL. Sorry.
1: A simple awesome tasting mead:
Okay, here we go:
You need something to ferment in. a 1-gallon bottle is perfect. You also need an airlock of some kind. Fermentation produces alcohol and carbon dioxide. If you sealed up something that's fermenting it would explode. So you want to let out the CO2 without letting IN any air (contamination, blah blah.) Some people use a balloon with a pinhole in it when they're getting started. But a proper airlock is only a couple bucks.
A profoundly simple, wonderful tasting mead that's great to start with is one called "JAOM" (Joe's Ancient Orange Mead.) There's nothing ancient about it.
Now? Just put all that in the jar and put your airlock on it and wait.
The hard part? Waiting. Depending on the temperature it may take a day to start bubbling. It will actively ferment for weeks. Perhaps a month or more.
You need to wait for it to clear. Really clear. Like "I can put a piece of paper behind this and read it through the mead" clear.
This is going to take months. I recommend putting it in a closet someplace and pretending to forget about it.
You'll notice, over time, that a layer of stuff is going go cover the bottom of the jar, and get pretty deep (maybe an inch or so thick.) This is fine. It's mostly dead yeast. There's nothing wrong with it, but it's a little gross, so you don't want it in the final product. What I did before I had syphoning gear was pour as much off the top into a soda bottle as I could, then pour the rest into another one. It would re-settle so that I could do it again.
It's a cumbersome process, and you'll always have to waste some of your initial product. But it's worth it.
Now that you have a bottle of clear mead you have two options, only one of which will you take.

Found this tall glass at Goodwill, it was someone's best man gift I guess based on the inscription I frosted out.
The mouthpiece looks like part for a lamp, I'm looking to change the grip tape with something in the same color scheme as the rest still, but she works, and I'm very happy with how it turned out.

If you're trying to make a great presentation it's nice to have the right traditional glass, but the Spiegelau "pilsner" glasses are great all-around glasses.

There's a 10 oz. bottle as well but it's only a couple bucks cheaper. You might also find smaller sizes cheaper elsewhere. Etching 8 glasses barely used any so 22 oz. will last a long time for sure.
Contact paper - $3.90

You'll also need a sharp fine-point blade like an X-acto and gloves for the etching process, but those are pretty cheap to come by if you don't have any sitting around.
Most beer people will have plenty of glassware, but DFH/Sierra Nevada IPA glasses are pretty cool and most people I know have really liked using them.
There is definitely a level of snobbery surrounding certain things and a bad glass certainly doesn't ruin a beer but if the option is there then a nicer glass is always going to be more enjoyable. I'm the first to rally against snobbery and the amount of misinformation being passed around the internet surrounding beer - but I genuinely believe make a very noticeable difference

I've got half of dozen of these and love 'em. Nucleated and logo-free.

How experimental are they and what kind of beer do they brew?
If the answers are "very" and "mostly hoppy stuff", then I'd look at some experimental hops. Here's one crop in particular from a regular poster around here, and this is the page where you can find all of their sales stuff where the old experimentals live.
Other than that, I have custom pint glasses with "KEM10 Brewing est. 2010" that I love, and a friend has his name on a custom growler.
There's also always a new "correct" way to drink beer. Recently TeKu glasses are that distinction. Previously it was the Spiegelau stout and IPA glasses that were designed with blind taste tests with different breweries. Next up, they're going to reinvent the wheel.

The Spiegelau set is usually a pretty good place to start, especially if you're looking for a decent range of glasses. You could add another glass or two onto it (snifter, flute, stange, nonic, etc.) if you think he brews styles that might call for one of those.
I'm a fan of Spiegelau. A common complaint is that they break too easily, but I wash all my glassware by hand and have never had any issues.

These are the beer glasses I use - basically exclusively I think they work really well for all types. They are similar to your Choice C, but I think they are made of nicer (thinner) glass.

These are the glasses I bought. I only wanted the glasses but it did come with a flight. My problem with those paddle style ones is the glasses can fall especially after a few beverages. I used a 2 1/4" forstner bit and the glasses fit perfect.

He sounds similar to some friends of mine, who are all crazy about beer and have tastings on occasion. If he doesn't have a set of beer sampler glasses, like this then I would get him a set and a few unique beers to try. You can ask at a local liquor store for unique craft beer suggestions in your area.
They're glasses specifically designed for IPAs. They were designed by Dogfish Head, and Sierra Nevada and made by Spiegelau. They're real delicate, but I think they work really well.

I have a few sets of collectable German beer glasses but have had a hard time selling them. I got these for cheaper than this, and tpyically use them or another tulip. They arent 14-16 oz i dont think, but i dont pour out a while one a time. Libbey makes some ones that are similar and cheaper still, though the glass is a bit thicker. a normal pint glass wouldnt be bad though

If you're drinking an IPA drink it from the Spiegelau IPA Glass. Almost anything else can be drank from a Stemmed Pilsner.
Only exception imo are heavy abv bourbon barrel(or other heavy barrel aged) beers. For those I go with a Teku
