You can make surprisingly classy hors d'oeuvre on a budget with cheap lumpfish caviar. Here's what you would need to make around 200 caviar toasts (4 /guest):

  • Cheap Caviar:
    • Amazon sells 12 oz jars of this stuff for $15.95 ea. Assuming 1 teaspoon/toast means you get 72 toasts per jar, so 3 jars would get you 216 toasts: $15.95 x 3 = $47.85. I've never used this brand, but when I make this I go to the grocery store and just get the cheapest stuff they have.
  • Toast
  • Just cut the corners off of cheap white bread, and then cut them into 4 triangles and toast. Assuming 25 slices of bread / loaf, you should just need one loaf. Depending on where you live, this should be around $5.
  • Creme Fraiche
    • This can be expensive to buy pre-made, so just make your own. Here is a recipe from Lynne Rossetto Kasper.
    • 96 oz heavy cream for around $15, plus 6 oz of buttermilk for $1 comes to around $16.
  • Fresh Chives:
    • This is really to taste, but I would image you would need quite a bit. Depending on where you live, you should be able to get all you need for between $5-$10 at a farmers market.

      The total should come to under $80 - not bad for caviar for 50 people.

      Make the creme fraiche a week before the party. The day before, finely chop up the chives, mix them into the creme fraiche, and stick the mixture into the refrigerator. Toast your toasts in the morning before the party, and just before people arrives put around a tablespoon of chivey creme fraiche onto each toast, topped with a teaspoon-ish of caviar.

      For you main dish you could slow cook a shit load of pork shoulder to make carnitas. Pork shoulder prices in my area tend to fluctuate quite a bit, so just keep your eye your local grocery store or Costco/Sams so you can buy at a low point. Here is a good recipe I've used before. To make it a little fancier, you could top it with a mango salsa.
