Reddit did not like my text. here it is. I wanted to replace my glass L-shaped computer desk as I had it for 10 years and wanted to fix issues I had with it. So I laid out my requirements:

  1. I wanted a wood top, as glass, while easy to clean and maintain, is colder than wood.
  2. Improve cable management to hide as many cables as possible. Glass/metal table not effective here
  3. Hidden power strip
  4. No table legs blocking me from moving back and forth between home and work computer.
  5. Current glass desk is 30 inches deep, I like that depth.
  6. I wanted the table height to be able to fit my file cabinet underneath to clean up the space

    I looked at roomandboard.com, and found a table I liked, but not cheap, with shipping, around $1700.

    I started by looking on r/DIY and came across pipe desks. Great idea, industrial look, and would fit in with my building as i live in a gentrified industrial neighborhood.

  7. Having to strip/paint pipe - i live in a loft and have limited space, fumes/vapors will kill brain cells.
  8. Loved the wood, but would have to sand, stain and poly it. Sand would get all over the loft and again, fumes/vapors.
  9. I am not experienced with staining, so may screw it up.

    So i needed to solve the wood top issues and the legs problem.

    Benefits of buying finished
    1. looks great

    3. can be ordered with poly finish (no chemicals)
    4. can be custom ordered with edge (e.g., bullnose, square edge) and size

      Issues - costs can be higher and staining is not possible

      Things to consider if you choose this approach - Ensure you know if you wanted finished (Poly) or unfinished. You can get it either way. John Boos will burn their logo into the wood unless requested not to have name.

      I decided on 60 by 30 by 1.5 inches thick Maple, square edge, poly and no logo. Good news is that crosscut had it in stock by both vendors.
      John Boos $328 and Michigan Maple ($298). I went with John Boos as the finish was smoother and the wood pieces were the length of the table, not the traditional butcher block style.
      I bought two.

      Solving the Leg issue

      I searched on line for "metal table legs" and found several vendors.

      The legs are ok, adjustable, and low shine black, but not as rigid as I wanted. Not an issue when assembled, but more just me knowing it could be better. I later found out that i could buy the cool square legs from Room and Board for $40 a piece.

      Connecting the two tables together

      I saw that u/tylergarner used a window sash to connect the two tables together and I was going to run with that, but I then saw this idea on the crosscut site.

      I bought a much longer screw from Ace HW to enable more space between the brackets so I am not screwing too close to the edge.
      You may be able to go to a countertop store and buy one from them as they use them to connect countertops together.

      Supporting the missing leg

      I installed two of the following

      These work very well, zero sag, even after sitting on it for a few mins (155lbs).

      How did i mount my PC underneath my desk?

      I used 1.5 inch fender washers and screws where the legs go to mount to the table, then I used cable ties to hold of the PC (intel NUC) and USB drives.


      Note:
      I did not use any of the screws provided in the legs, or options i selected. Maple is very hard and the philip screws they provided strip very, very, very easy. I went to my local Ace Hardware store and bought my screws. 5 min walk and could by individually versus a whole box from HD/Lowes. Saved money and frustration.
      I generally got the biggest diameter screws I could get the fit the hole for the legs, and they are in there, zero issues. I live all by myself, but I like to make 3 - 4 servings of whatever I'm cooking at once, and then portion it out for the week, so that I don't spend a fortune eating out.

This is my favourite pan. In this one, I make pasta (it holds enough water for 1 lb of pasta), I can make soup, I can make pilaf, I can do stir-fries, I can make crepes and pancakes, and it cheerfully handles it all with no problems. The nonstick is good, although you do need a bit of fat to get things moving. I never run it through the dishwasher. Only hand wash with a soft sponge, and some dawn, and everything is fine. I only use wood or silicon utensils. So far, it's been a year, and it's held up great.

This is a saucier. On the rare off occasion that I want a pot of ramen, or to make a tiny quantity of something, this is perfect. It's also great as a bean pot. When I make a pot of beans, I don't need a giant quantity. I just need enough for me to each lunch a few times. This is just the right size for me.

With those two pots alone, you can cook the vast majority of what you need on a day to day basis. I would suggest getting a rice cooker.

I recommend the Victorinox Fibrox, it performs well, it's comfortable and it's very durable. If you find the Fibrox handle too ugly, they offer the same blade but with a rosewood handle.

Care wise, touch up the edge with a hone to ensure it performs the best it can before you begin preparing food. Eventually however the edge will wear down, at which point you will need to sharpen it. For this I recommend the Shapton Kuromaku 1000, for guidence on how to use a whetstone check this playlist out.

The whetstone itself will also need to be maintained, as you use it you will wear it down unevenly and it will need to be flattened. Most people use a diamond plate but there is a more cost effective option that I use which is lapping the stone using SiC powder on glass, which is done like this (be aware however, that this method is MUCH louder and a bit messier than lapping with a diamond plate).

If all of this sounds like too much and you want a more simple care solution then you can get by very well by just using a ceramic sharpening rod. It combines the ability to touch up the edge quickly before use with the ability of a whetstone to remove material from the blade.

I got by with just a ceramic rod for a long time, but eventually bought whetstones when I wanted more control/better long term maintenance.

I live in NYC and have a ton of tips as I've moved quite a few times. It is a challenge, you want a working kitchen, you want it to look nice, and you want all that gear.

  1. A lot of places have space above kitchen cabinets. If there is any, you can buy rectangular baskets or metal bins to store your appliances, less used gear or even linens. I put my food processor, blender, mixer, etc up there.

  2. Make a rule that every item has to server more than one-purpose. They have to be double duty. It's really great to think twice.

    My salad spinner can be used to a) clean lettuces b) used as a strainer, c) LARGE serving bowl.

    I even rationalized my Kitchen Aid, that mixing bowl is HUGE. I use it for salads, even hand mixing large amounts of food. I also keep it out on top of my Fridge.

    We nixed the coffee pot in favor of a French Press, yes we need a tea pot but that lives on the stove top and the French Press fits in a cupboard.

    Pyrex! PYREX! PYREX!!!!!!!!!!!!! preferably with lids are probably the most versatile thing you can have in the kitchen. They can go in the stove, fridge, freezer, microwave, table, used as double-boilers, vessels for water baths, molds, cake pans, pastas, travel, to work, eat from them on and on. I have tons of these and they are constantly in use. Give these sets as gifts, ask for them as gifts. Also they generally nest.

    Clean house. Give away things you don't use often or can be done by a double-duty appliance. I used to have a deepfryer and an ice tea machine!?! Who needs that? I have a dutch oven and a tea pot.

  3. Stick with oven-safe pans. Most of mine are castiron and live in the oven. I use my stock pots for mixing bowl etc.

  4. I just bought a used chest-of-drawers for my boyfriend ( he has a new roommate and they ran out of food-storage space). He replaced his living room TV stand with the chest-of-drawers and now he has room dry foodstuff.

  5. Jelly Cabinets. You can get these handy cabinets cheaply. They are solid wood, can be painted, stained and come in many sizes. Mine houses a ton of stuff and only takes up a the footprint of the microwave that sits on it.   12. Reorganize your cabinets, you can add all sorts of cheap office file-organizers to make space. Turn them side-ways or upside down to see if you can put something on top of something. I used to cavernous top-shelf cubby and I found this weird wine rack that I used for cans and there was room on top for an appliance.

  13. Nesting and unconventional storage. I've been known to put my ice cream maker in my bedroom closet. There are decorative bowls around my living room that go right into my kitchen when needed.

  14. (Sorry this went on and on) Lastly, you don't have to spend a fortune. Think outside of the box, get creative I gave up trying to attach a bunch of expensive storage things to my kitchen cabinets. I rent, I'm not able to completely settle down. Things need to be more versatile for me and not cost a fortune. Go on craigslist, yards sales.

No one here is going to gatekeep cooking. Cooking is whatever you want it to be.

Go to Budget Bytes. It's a recipe blog run by a very talented, yet practical woman who makes fast, easy, reasonably healthy, generally from-scratch, cheap meals. She doesn't make bad recipes, and she doesn't make recipes just to take pretty pictures of plates like a lot of food bloggers. Find a bunch you like (maybe make a list in Google Docs/Sheets) and just cook one or two a week to get comfortable. She stays away from advanced techniques and difficult-to-source ingredients. You will absolutely be able to impress women with her recipes, all while saving money and eating healthier.

Get a sharp knife and a good bamboo or teak cutting board and spend some time watching YouTube videos of knife techniques. That will be your biggest time saver (and finger saver).

Something like this would be a great start; not too prep heavy and super tasty.

The reasons you listed for liking them are the reasons they are bad for knives. Do you use honing steel or a whetstone? You know how there's a proper angle for honing (~16 degrees for Japanese, ~22 for German) because it keeps the edge without wearing the blade down? Using these materials in a cutting board is like running the knife at a 90 degree angle to the honing steel.

I'm sure they're also comparatively expensive. Go buy 1 polyethylene (plastic) cutting board for chicken and maybe a second for other meats. Buy a bamboo or acacia (this one works great: http://www.amazon.com/gp/product/B000TZ0IQC/ref=ox_sc_act_title_2?ie=UTF8&psc=1&smid=ATVPDKIKX0DER) for everything else. Get some wood oil and take care of them; they look beautiful and last for years, and by oiling them you keep the antibacterial properties. Throw the plastic ones out when they start getting gouges because they store bacteria and they're cheap. I try to find plastic ones with colored borders to make it easy to remember: white for poultry, red for beef. But please, for the love of god, throw your glass ones in the dumpster.

Well, ideally it would be done on a commercial deli slicer. But, if you can get your long slicing blade nice and sharp, you can slice it by hand. A good slicer can run you from under $30, to $130 and up, depending on your level of interest in being a culinary guru.

These guys have a good video on slicing your own prosciutto. If you notice, they have the same type of knife without the gratons (those shallow, eliptical cavities in the side of the blade that keep the meat from sticking to the knife), and his knife is kind of sticking to the meat.

They're also using a holder for the prosciutto like this one. I helps, but isn't absolutely necessary.

Those are all good knives and they won't break the bank. Why is the nakiri in the dairy category? I would think it belongs in neutral as it really should only ever be used for vegetables.

As for cutting boards I would just get two plastic or wood boards. You don't have to go crazy with these but avoid very hard woods, bamboo, and hard plastics.

Something like this or this (first to come up on Amazon).

Also the Tojiro paring knife is pretty good and if you get that instead of two identical MACs you'll lessen the chance of getting them mixed up.

I use a cutting board mat to prevent slipping. It would go pretty well on that surface so you can place an actual cutting board on top.

Alternately, it wouldn't be a bad surface for bread work- kneading and shaping dough.

Can confirm. I purchased the 20x15x3.5" version from that same manufacturer (Michigan Maple Block) two years ago and it is pretty incredible. We seal it occasionally with Boos bee wax (if it's really dry) and Boos block oil (more often, after cleaning). We use it to chop things on everyday while cooking at home an it has held up incredibly well. We have a full set of Cutco knives that are sharpened often and there's no real obvious marks or wear to that block. It looks great on the kitchen island, which is a good thing, since it's too heavy to put away everytime you're not using it. Very much BIFL!

My cutting board cost around $60, and yeah, I cut on it, though it's not my main cutting board. I don't cut often or with heavy things because it's my presentation board so I like to keep it scar-free. I'll do knife skills demos on it for sure.

And yeah, I also rub it with mineral oil!

End grain maple is what you want.

Clean it with white vinegar every couple days, once a month rub it down with mineral oil. Keep it out of the water. It should last long enough to give to your grandkids.

I've seen cooks cut meat on those, but I personally only cut things on it I can eat raw. I lay a poly board on top for meat.
