I have this sink in my garage. It is awesome for home brewing, particularly when paired with a spring-loaded sprayer faucet like this one.

I am able to clean my 15 gallon SS Brewtech kettle easily - and I can even turn it sideways and soak both it and a carboy at the same time.

The sink is also great for washing the dog!

honestly, you're leaving the PEX exposed, I wouldn't use a proper spout, I'd run the PEX down the wall, 90 it out from the wall, 90 it downward into the tub, and leave the cut off PEX to fill the tub. Hell, you might be able to skip the 90 down into the tub, and just have it coming out from the wall, it'll probably sag a bit, and it's not likely to overshoot the tub anyway. It's going to be tough to get any sort of spout that doesn't expect to be mounted in front of a wall that's in front of the plumbing.

I suppose another idea would be to try to find a surface mounted faucet that you can use separately from the shower faucet (T off the PEX to the shower and feed down to the second faucet) just for tub filling. I'm pretty sure I've seen utility faucets that can be fed from in front of the mounting surface, and they seem like they would go with the aesthetic you've got going there. something like this

I'm glad the UV isn't an issue, I recalled having heard something about it but wasn't sure the details.

Here it is on Amazon. It comes with a little faucet and spray attachment, which I didn't use because they're deck mounted. I needed additional height for the kettles, so we built a cabinet from 2x4's and pvc sheeting, used wall mount faucets higher up. The whole thing is nailed into the foundation, and sturdy as hell. I considered stainless as well, but I don't regret going with plastic.

Four feet bolt into the floor and then the legs attach to those anchor points. Wouldn't those 4 points compromise the expansion?

I did this but with a humongous version of a utility sink, so I can fit 30x40 screens in it. Pro tip: put the sink backwards so you can use the lip for the faucet as a shelf in the front!
