EDIT: If you are looking for a certain product I have never used this but people swear by [3D Eraser] (http://www.amazon.com/Eraser-Water-Spot-Remover-16/dp/B004BFW0EO/ref=sr_1_2?ie=UTF8&qid=1457289700&sr=8-2&keywords=3d+eraser) . If the water spots are too deep the paint may need polished to remove them.
I had water spots on my hood for a while and I finally bought this.

Best practice is to get some protection on there in the form of a sealant (Jescar PowerLock) and a good, durable wax (Collinite 845). After the LSP has been applied the mineral deposits in the water will have a harder time attaching themselves to your clear coat. That's not to say that they won't, but it will be dramatically reduced. Sprinklers are the worst because you not only have the minerals from the hard water but also the rust from the sprinkler system. Nothing will ever completely replace getting that water off ASAP.

Yes, if you clay you will remove all wax. Unless the car spends a lot of time getting sap on it, don't clay too often. It wears down the finish over time since it's basically like lightly sanding the finish. When my car lived outside, I used to clay it at most once a year, and then use Meguiars paint cleaner between (maybe twice a year). Yes, you need to wax after using it, but it's less harsh than the clay bar. For really bad water spotting, use a gel.
When not waxing, just wash, dry, and touchup detail. I wash my daily about once a week. Although sometimes it's just the wheels that get dirty (brake dust), so I wash just those and use quick detailer on the paint. Maybe once a month or so, vacuum, dress the exterior plastics and rubber. About 2 or 3 times a year I give the car a thorough going over - clean leather, slather dressing on door seals, etc, clean vent slats, pull wheels off the car to power wash the back sides, clean the fender wells while the wheels are off, etc, etc, etc.
Yes, keep wax off the plastic bits. Peanut butter rubbed into the plastic will get rid of any white wax residue if you make a mistake. However, sealant on headlight covers makes them very easy to clean.
I've had pretty good luck with 3d water spots remover (https://www.amazon.com/Eraser-Water-Spot-Remover-16/dp/B004BFW0EO) but be careful and do small areas/remove it quick as it can damage the surface if left on too long.
