One of the most impactful aspects of a castle-type design for me is the stone walls. If you don't want to actually remodel your walls, there is the wallpaper alternative ( http://totalwallcovering.com/c74/stone-prints-wallpaper.aspx ). I did find this video which looks like it matches the idea you are after ( https://www.youtube.com/watch?v=amCmS3bpeVg ), and of course you could go for proper stone walls if that is an option available to you.

Aside from that, I think plain iron wall sconces are a good touch, especially if you have enough ventilation to have lit torches (or if not, fake ones such as http://www.amazon.com/Battery-Powered-Flameless-Torch-Insert/dp/B000WI9F6A ).

Plain wood is great, and this trunk ( https://www.etsy.com/listing/190787608/barn-wood-trunks-chests-steamer-trunk?ref=market ) looks pretty good. It isn't fancy or distinctly dungeonesque but in combination with everything would work well.

For a table, you can lay a plain wooden door across a couple of barrels (using wood glue or some other method of attachment).
