Thanks! A pellet barbecue/smoker has a hopper for wood pellets, typically made of Oak or Alder, with a certain percentage of an aromatic hardwood, such as Mesquite, Apple, Cherry, or Maple. These are fed into the firepit via an auger that is controlled by the thermostat, allowing you to set a temperature for cooking. Real barbecue (low & slow) usually happens around 225-235°F, which allows for longer cooking times in order to break down tough connective tissue in traditional BBQ foods like brisket, or ribs. Crunch chicken skin comes at higher temps, though. The "Chef Merito Carne Asada" seasoning can be found in a lot of supermarkets in my part of California, or almost always in a 'Mexican' market. It's basically Salt, sugar, chile powder, & some citrus. This could be easily approximated with stuff from your spice rack (see if you can find dried Pasilla chile powder if you make your own. The "Chocatal" was discovered at my local supermarket, but it's available online:

"Johnny's Great Caesar" (1g total carbs per 2 Tblsp!) is a must for any keto fan (who likes Caesar dressing), and is fairly common in supermarkets here, but also available online:

Lastly, here's a link to the Pellethead.com site, where you can learn more about pellet stoves & cooking than I'll ever know:
