If you have really good above access from your attic, installing a new work can is my preference due to better insulation [1][2]; it is also more labor intensive so keep that in mind. Use a laser level so all the cans lignup.

Generally you pick the can based off of the trims they offer. I like 4" cans as they are small enough that they disappear, but big enough that you can put in a brighter bulb if needed. My goto combo is the juno 4" air tight with a white trim or gimbal trim with a 36 degree bulb. When using the gimbal remove the screws that hold the light bulb base to the top of the can.

Also recommend hiring a pro if you're unsure about any part of the install. Since this will be highly visible, see if you can get some pictures from the business's previous can installs.
