- New Luxurious Black color version of the highly reviewed and very popular i10s. Made-for-iPod, Made-for-iPhone, Made-for-iPad Bluetooth Transmitter. Plug and play, easy to pair, remembers previously paired devices and re-connects easily. Pairs/connects to stereo receivers with pin codes '0000' or '1111', or '1234' or '8888'.
- Tiny size, smaller than other Bluetooth Transmitters for iPods, iPhones, iPads.
- Elegant streamline design with Luxurious Black color, shine and finish for refreshingly new and clean look/feel - unlike the dull finish in many other products.
- Easy to use, no button design. Without button there will be no accumulation of unsightly hard-to-clean dirt/grime in the edges of the button, as designed in many other products - some with particularly large button in the front.

Here it is: https://www.amazon.com/gp/product/B004SH40BQ
There's a picture of it in an iPod Nano on that page also. It stuck out about an inch or so? Maybe less? It wasn't too bad.
I'm using a KOKKIA i10s with my iPod Classic 7G and AirPods. It costs $60, but its really worth it! https://www.amazon.com/KOKKIA-i10s-Black-Bluetooth-Transmitter/dp/B004SH40BQ/ref=sr_1_3?ie=UTF8&qid=1538599448&sr=8-3 Works with my bluetooth speaker as well.
As annoying as the floppy dongle would be, the 3.5mm solution is the most reliable one out there.
There are some models that, while they still stick out like a sore thumb, try to keep the package as compact as possible. Here’s one: https://www.amazon.com/gp/aw/d/B00IQYC4R4/ref=psdcmw_9926003011_t1_B01KXIKCSI

This one supports aptX if you have compatible Bluetooth headphones: https://www.amazon.com/KOKKIA-Luxurious-Transmitter-authentication-receivers/dp/B008PWN0I4/ref=pd_aw_sim_sbs_107_3?_encoding=UTF8&psc=1&refRID=K15NQ502M06MZ4H9Y23F
I bought this one and it seems to work good so far (other than the issue with AirPod volume range mentioned in OP):

There are plenty more options available though if you do a search.

Or

Use the 30-pin instead of the remote port but they work.
No bluetooth on that iPod? Get something like this (that one's way way way too expensive)
KOKKIA i10s (Black): Tiny Bluetooth iPod Transmitter for iPod/iPhone/iPad with Apple Authentication. Works Well with Apple AirPods. Remote Controls, Local Volume Control Capabilities. Plug and Play. https://www.amazon.com/dp/B004SH40BQ/ref=cm_sw_r_cp_apa_i_W0S1CbWSE71JH
Even nicer. Now I need a thingy to connect on the dock port of my iPod Classic in order to give it Bluetooth.
