Use an RCA to HDMI converter. I have used this same converter to connect my old consoles to a Samsung Smart TV and it worked well.

That specific cable won't work, it's designed to connect to a VGA output, and the output device has to support it.
You'd have to use something like this. That shows VGA, composite, and s-video inputs, and a VGA output. I've used a similar device in a retro emulator build to connect VGA to composite, and it worked well enough, but I can't vouch for that specific adapter.
You might have better luck with something like this instead, as it'll accept the audio input as well and send it all over HDMI.
All of these adapters tend to be hit-or-miss in my experience. You'll definitely be able to find one that works, but make sure you buy from someplace with an easy return policy along the way.
The absolute best solution would be an HDMI mod for the N64, but that can get expensive, and isn't super easy to do yourself.
As far as an alternative, external adapters that do this are like $15.

I use something like this, except I have multiple retro devices so I use a hub/switch with multiple input ports. Works for any model Gamecube.

You still need a capture card and It’ll be laggy and with terrible video quality, but I don’t think you can find anything cheaper than this.
Ok see but here's the problem right? How is he going to hook up video to his TV if his TV doesn't have analog?
This is why his exact setup is important. If he's running a cable or satellite box, then he really shouldn't need anything different at all, assuming his cable/satellite box also has HDMI on it. Because then you'd run HDMI from the cable/satellite box to the TV, turn the TV volume to zero, then connect the analog out sound from the cable/satellite box to his amp/receiver. Not an ideal setup, but it will work just fine.
If he's running full analog (no HDMI on the box), there's no way to convert analog to digital so he'd have no way of getting a picture on his TV, seeing as the TV doesn't have any analog on it.
That is all I can really say for sure without knowing all the equipment involved and how it is connected.
