Something that I've considered personally is raising more 'exotic' fowl... they fetch a better price at farmers markets, are 'unique,' and usually you can find some better suited to your environment.
I was considering quail, dove and pheasant personally... I believe those have species which are adapted to desert environments. Still get eggs, meat, scratching, etc.. plus with pheasants specifically you get really pretty feathers which are quite valuable in craft circles.
Quail eggs are a gourmet item that people pay quite a bit for.
My point is keep an open mind and you may stumble across a cool niche.
