What is that component adapter you are using? Looks like this but without the audio jack inputs. Nice work tho, I plan on doing something similar soon, but have all 5 rca plugs go out to not need the A/V cable.
I use a [bn39 adapter cable] (https://www.amazon.com/Samsung-BN39-01154W-CBF-Signal/dp/B005DNSCNG) on my LCD Flat Screen TV. I don't play Wii games that much, instead opting for Melee (I know, I know, blah blah blah input lag blah blah blah CRTs), but when I do play Wii games (Brawl and MKwii mostly) they always come out black and white. Can anyone give me an explanation? I think I know why, since I've changed that part out a few times, and this time we used a different brand, but does anyone know about this for sure?

So I got it working. Instead of the cord I posted below I plugged in a seperate adapter meant for composite audio and video (http://www.amazon.com/Samsung-BN39-01154W-Cable-CBF-Signal/dp/B005DNSCNG/ref=pd_bxgy_e_img_y). Now it is working all good to go. Really weird though. Thanks for all the help
