Yup, the leafy stuff is baby spinach sauteed with 1 clove of garlic. I used a little sesame oil to flavor it before serving.

The bowl to the top right of the photo is mentsuyu which is typically served as a dipping sauce for soba. It's a mix of dashi (stock made from bonito and kombu, but I cheated and used Hondashi ) , soy sauce and mirin.

The tempura shrimp is [premade] (http://seapak.com/products/tempura-shrimp).

I also chopped 1 scallion and grated about 2 tsp of ginger (typically you'd grate fresh wasabi but I live in the states) which you would grab bits of with your noodle before dunking it in the mentsuyu.

The 'soba'/miracle noodles I rinsed thoroughly to get rid of the funk and soaked it in some ice water the entire duration I was prepping the rest of the food, roughly for 30 minutes. I then took 2 sheets from a roasted seaweed snack packs and cut them up to put on top of the drained noodles.

This is what zaru soba & tempura would typically look like if you ordered it at a restaurant. Soba on its own is a 'healthier' alternative to pasta as it is made from buckwheat, it has less calories and more protein and fiber, but since I only had a little under 300 calories left for yesterday's dinner, I went with the miracle noodles.
