It will let you use a PS1/PS2 controller on the Wii and GC. Maybe you'll find Playstation controllers more comfortable.
There is a VERY good playstation 1/2 to gamecube adapter that OP could use at tournaments. The playstation controller is actually pretty godlike for melee/pm

I know it's quite a bit but it's probably the best solution. The only thing is it only works on the original Wii and not the Wii U since there's no GCN controller ports.

Edit 2: If this is the route you do want, be sure to deselect the two optional accessories at the bottom. It drops the price on the controller by about $80.

If you have look around there are adapters which allow you to use the PlayStation dualshock controllers such as this one
Otherwise this controller which is made to a similar style but made specifically for the gamecube ports has fairly positive reviews right here

Seems from the reviews that it is a good product. All of these people who are asking why didn't they make the smashbox with a stick could have something to try out.
I have successfully used my PS2 controller, with a PS2->GC adapter.
If I remember correctly, it even let me play Tatsunoko vs Capcom with a NubyTech SF pad.

As to using other controllers, this may work for you but I would make sure that the emu's you intend to use support GC controllers. I have this same adapter and it worked just fine for GC games on the Wii.

Well, they do have this adapter for PS2 controllers, which apparently works okay.

I ended up getting a ps2-to-GameCube controller adaptor and use either wired Sony controllers or Logitech wireless ones. You can usually find them as DDR pad adaptors. The downside is remembering the layout. Bonus: it works for the original Wii that has GameCube ports, too.

It really depends, do you know what brand and have looked up info about using ps1 controllers with the adapter? I know there are some other adapters like this one that state that it does support ps1 and ps2 controllers, but from the looks of it, it seems that this is the adapter you linked and someone did ask the same question about using a ps1 controller, albeit he asked about the steering wheel, but I'm pretty sure it would work. You could always return the adapter and buy a different one that supports ps1 if it doesn't.
Classic controller pro is a godsend.
