Recipe

Ingredients:

  • 1/2 cup + 2 tablespoons of almond butter, peanut butter, or any nut or seed butter.

  • 1/3 cup unsweetened cacao powder.

  • 1 flax "egg" (1 tablespoon of ground flaxseed + 2 tablespoons of water, mix and wait 5-10 min for it to "gel up.")

  • 2 1/2 tablespoons of sweetener of your choice. I used this one. Low glycemic index & it subbed sugar well without making the cookies taste weird or give them a funky aftertaste.



    Steps:

  1. Preheat oven to 325 F.

  2. Line a baking sheet with parchment paper.

  3. Combine all ingredients in a food processor. (Alternatively, you could also mix by hand or using a spatula.)

  4. Once mixture is moist and ingredients are well combined, make equal cookie dough balls using your hands and place them on previously lined cookie sheet. (Try the cookie dough... it is yum!)

  5. Using a fork, press down to flatten each cookie ball until about ½-inch (1 cm) thick. (Don't go crazy about this, just press down the cookies with the fork...)

  6. Bake for 10-12 minutes or until crisp. I left mine in for about 12 minutes - but YMMV, as usual.

  7. LET THEM COOL DOWN FOR 10 MINUTES - ideally you would pick up the parchment paper and set it on your counter (since the baking sheet will still be hot.) This step is super important because otherwise your cookies will be pretty crumbly and not hold up well.

    You can store them in an airtight container for up to 5 days or freeze for longer.

  • If you make 8 cookies: about 115 cals, 5g of protein, 4g net carbs, 10g of fat -- this is calculated using peanut butter - may change if you use a different seed/nut butter.

I'm in a similar boat! I have PCOS, an underactive thyroid, and am vegan, trying to be keto without soy as well.

I have been failing with vegan keto for a while, but I finally found an amazing protein powder that is vegan, low-carb, soy-free, has a good amino acid profile, and is made in the US. The only ingredients are peas, brown rice, and B12, but there are 25g of protein and only 2g of carbs per serving. It's this one:

I blend it with frozen fruit and leafy greens (you could thrown avocado in too), and it's great. That takes care of breakfast, and makes at least one meal of the day not complicated. And honestly, if you need to, it's something you can have for every meal while you figure out other meals.

See, I think I might be the same. I haven't been exercising much so far during these first few days of keto (I'm initially doing it for some brain balance and adrenal fatigue recovery before I start hitting the exercise again), but I feel like I could never catch my breath no matter how many carbs I ate however long before exercising. I'm pretty sure it was my adrenals struggling with the cortisol for the workout and to regulate the blood sugar (adrenal fatigue = tired if you didn't know).

So I think keto will be good for me in that regard.

Really, the biggest thing I'm wondering about with multivitamins (which is not easy to determine) is if they are supporting the animal industry to make the vitamins. I personally like eating meat and fish. I like the taste of grass fed meats and wild caught seafood. I'm partially against the violence of eating animals, but I also kind of think of the fact that life does eat life (even if we eat plants, plants eat other dead plants and animals and little amoebas eat other little amoebas and so on…), so it's kind of moral to an extent. But if the company that makes the vitamins feeds into the inhumane slaughter of so many animals to extract some of the vitamins, then what's the point? Know what I mean? A lot of people don't think that far because it's so far from their plate and they don't see it. At the very least fish oil should be off the table for a true vegan.

I really don't take a multi, but I take a B, some magnesium taurate, vitamin D, and some herbs for adrenal fatigue. You should at least look into this one sometime. That brand is a little spendy, but supposedly it's made from all whole plant extracts. At least worth a look. I'm pretty sure those nutrients are all absorbable.

The thing you should note about coco oil is that it detoxes certain things from your body. If you haven't taken it for a while, you might be getting "die off" symptoms from the coconut oil pulling certain toxins out of your body. I think it's mainly yeasts and funguses and things like that that are pulled out, but I'm not sure. Those MCT's are the shit though. They burn immediately regardless of if you're in ketosis or not. They are fat that are burned directly for energy, regardless. I've even heard that Alzheimer's requires ketones/fat to heal, and people can see immediate memory gain right after eating MCT-heavy meals. Also I found that cancer cells have messed up mitochondria and can't process fats for energy, and they have like 10x the insulin receptors on them than a normal cell. They CANNOT survive in a strong ketosis environment. Keto for the win.

How's that for a conspiracy for ya? Cancer is probably partially caused by way too many carbs/acid, and it needs at least some carbs to survive. Also, they give you sugary foods at the hospital, during chemo, says my friend. The healthcare system is corrupt.

So yeah it seems like you are on a few weeks of keto now? I'm literally on day 3 or 4, and my anxiety has gotten much better. I really probably am not eating enough calories. I need to stock my pantry with lots of fats and low-carb proteins, soon (I'm thinking organic black soy). But definitely, my anxiety has gone way down and my focus way up. Its kind of like a strong sense of chillness is draped over me. I can't wait to become keto-adapted.

It’s actually my roommate’s airfryer but I use it so much it is basically mine now lol. I use the BELLA 14538 2.6 Quart Air Convection Fryer, Black and it’s just your basic run of the mill airfryer but I like it because the nonstick coating hasn’t scratched off like I’ve heard other ones can and it is also very big. I got my friend a Dash mini airfryer as a house warming gift and we tried it out but the Bella one I have is better.

"Good" is subjective really. I cannot vouch for taste, however I can provide you however with very cheap soy protein powder which (I think at least?) is heat treated so shouldn't have the phytoestrogens or whatever:

Any soy/pea protein powder is pretty good honestly (Except bulk supplement pea protein, unless you're an athlete, cause it has a LOT of salt). Again, cannot vouch for taste. I don't know if they are actually Keto or just low carb (I don't follow keto diet, but like low sugar options), but the Purely Inspired protein shakes are vegan, 120 Cal, 20 prot, 1 net carb.

Edit 2: some of the reviews mentioning dairy might be based on some of their powders or older formula. The RTD says dairy free and I read every ingredient to make sure I wasn't giving bad suggestions.

I'd like to point out that urine-based keto strips aren't the best way to test for ketosis, because you can be in ketosis without ketones showing up in urine. Finger-stick blood testing is the best way to go, but it's not cheap because you have to get a meter, and the test strips are considerably more expensive than glucose strips.

An alternate way to check is indirectly, through blood glucose testing, but this doesn't work if you have either diabetes or metabolic syndrome. In short, you need to check your glucose four to six times a day, before eating, as you begin to enter ketosis. When you first cut carbs out of your diet, you should see a drop of some greater or lesser magnitude, but after a few days, it should come back up and settle at a pretty stable level. That's a good indicator that your body has started to produce ketones to maintain your blood glucose at a stable level.

I did vegan keto for 5 months and liked the way it made me feel/look! The only issue for me was going out to eat with people. Since I was trying to stay under 20g of carbs, I couldn't really eat much off of a menu besides vegetables slathered in olive oil or avocado/tofu things. I found two protein bars that are really low carb like Julian Bakery's Pegan Bar (don't bother with any flavors but vanilla cinnamon roll) and the No Cow Bar. This is my favorite cookbook I've used so far.

As far as general advice, shirataki noodles and cauliflower rice are your friends when you're craving starchy foods.

I start each day with a smoothie that's 2 cups spinach, 3 scoops protein powder, 2 cups unsweetened coconut milk(carton), 1 tablespoon chia seed, liquid stevia to sweeten, and a crazy large heaping of cinnamon to top it off. That gets me 60g protein right away and it's easy to hit that daily macro just eating the way I normally would after that.

Late to the party as usual, but I eat the No Cow bars. You can get them on amazon here but I’ve seen them cheaper at Walgreen’s. They are fairly good but more importantly they do the job when I’m on the go. But the cookies are better!

I’m partial to a curry coconut soup made with Thai curry paste, coconut cream or coconut milk, and whatever protein and veggies you have on hand. Heat and eat.

This paste is pretty tasty and a can makes 2 or 3 meals for my SO and myself. I’m happy with tofu cubes, mushrooms, bamboo shoots and spinach, finished with a sprinkle of cilantro and sliced scallions.

On most days I eat a lot of sprouted seeds, coconut butter, almond butter, raw walnuts and brazil nuts, even if I can't find sprouted ones. Macadamia nuts are awesome when you need portable fat calories.

If I've been eating mostly whole foods and want desert, I really like No Cow Bars, and 4g net carbs for 20g of protein isn't bad after all those seeds. I try not to eat soy but this vegan jerky is amazing. The black pepper and smoked chipotle flavors are 2g net carbs/oz, but some of the sweeter flavors are closer to 10g, and the maple Sriracha (absolutely the best) is 4g.
