Honestly it depends on how long your rides are and what your condition is. Back when I first started I would have a camel pack for water and to carry food and tools, but as you noticed it is heavy, and in my case since it has water it tends to shift around a lot. I suggest get a frame bag

As for pedals and shoes, yes there are different pedals and shoes to match, I know for sure of 3 different pedals, might be more, not sure. You want to look into which pedals you would prefer, competitivecyclist.com has the 3 that I know of, 2 I've seen used for cycling, the 3rd might be for mountain biking, not sure.
