I use a food grade silicone dog bowl. They are a terrible design for dogs (they can step right on it and let the food/water everywhere) but they are an amazing design for soups! You just peel the silicone away from it when it's frozen. They come out perfectly round discs that fit in gallon bag when done, and end up fitting in my medium pot perfectly without corners being in the way. I just cover it with a lid and melt in on low heat until it's heated through again.
