As others have mentioned, OP used water stones free hand. Being able to sharpen free hand to the level in the gif takes years of practice and some serious skill.

If you want to get a knife as sharp as the GIF, without dedication and practice, I recommend buying a fixed angle sharpening system. The hardest part of sharpening free hand, is being able to keep an extremely precise and consistent angle on the knife. Fixed angle sharpeners hold the stone and the knife at the right angle for you, making sharpening extremely easy.

A high quality fixed angle sharpening system isn't cheap, but the cost is comparable to what a set of good Japanese water stones would cost you. I've used the KME system for quite a while now and I highly recommend it. It gave me an edge that would whittle free hanging hair the first time I used it.

If you're on a budget, the lanksy system is much more affordably priced. Unlike the KME, you probably won't get to OP's level of sharpness, with that said, the lanksy can still give a very fine edge.

Costs a bit more than 150 but totally worth it.

I second the KME. Pick up these two items one two and you're golden. Just make sure to lay down sharpie every time you sharpen so you get an even grind. It's just as easy to mess up your tip with a mounted system as it is with the Sharpmaker rods.
