Ain't that the truth. I've had my share of headache trying to match the two. Blubs will claim dimmable because the transformer won't break if you connect it to the dimmer, but that doesn't mean that it won't have some side effects. Humming/buzzing is the most common.
OP might need to try an ELV dimmer if none of the rated "LED/CFL" dimmers work. They're expensive, but work with fixtures that cheap dimmers won't agree with.
I look forward to the day that we just run 12v DC to lighting fixtures.

if you want the maestro style you could use the one you found but you dont need the maestro wireless unit
Supposedly I need an ELV dimmer (as per the retailer). Is there any difference between this kind and this one.
There is only one switch on the wall that controls the light.
I use the ones from Lutron.
You might be able to reduce the number of can lights needed if you look at the cree t47 and t67. These lights will usually fit in a 4" ceiling box as long as it's not a shallow one. Be aware that to dim these you need a electronic dimmer, otherwise they buzz a lot with a standard LED dimmer.
