Chocolate orange chocolate chip cheesecake.

Take 4 boxes of cream cheese, open them and float the foil packs in a sink full of warm water for 15 minutes.

Open the foil and dump the cream cheese in a large bowl with 5 eggs and a cup and a half of sugar.

Mix by hand or with an electric mixer until smooth and consistent.

Add 1 tablespoon of vanilla, 1 teaspoon of orange extract, 1/4 cup of Grand Marnier and 3/4 cup of dutch processed cocoa powder (check the bulk foods aisle for that MUCH cheaper from bulk foods).

Again, mix until smooth and consistent.

Add an entire bag of miniature chocolate chips. IMPORTANT - full size chips will NOT melt all the way. Use mini chips.

Mix well.

Now, take a 9 inch springform cheesecake pan. Spray with non-stick cooking spray. Add in 1/4 cup dutch processed cocoa powder and tilt the pan around so it covers the entire inside of the pan. This will bake into a dark chocolate crust for the cheesecake.

Pour in the batter and bake at 200° F for 8 hours. This is called a slow bake cheesecake.

After 8 hours, remove from oven and set on a wire rack to cool to room temperature.

Refrigerate for several hours.

Tilt the pan on edge and rotate it around so the edge of the cake can pull away from the pan.

Put a plate on top, flip the cake upside down and remove the springform pan.

Now the recipe calls to flip it back over for serving, but I think it looks a lot cooler this way. Your choice.

Refrigerate overnight before serving. I decorate the top with those little candy orange slices.
