Put them up in trees - one covering the gate area, one covering the back of the property, etc.

I've heard redditors recommend this camera before in situations like this. I'm looking for an excuse to buy one personally.
Also, keep his letters safe. Since he's printing them, they're tied directly to his printer even if there's no fingerprints on them.
I really think this is the best idea. If you have the cash, I think a trail camera would do the trick pretty well, although I will admit that I don't know much about the things. And once your troublesome neighbours are dealt with you can set it up in some local woods to get some great wildlife shots!

Here is the camera it gets the job done but its nothing special. I painted it brown and stuck some leaves and dirt on it to hide it better.
